Blueberry rainbow breakfast bowl. Say that a few times! This has got to be one of our favorite breakfasts! It’s so cold, creamy and absolutely delicious! So we just had to pretty it up for St. Patrick’s Day!
What You’ll Need
*1-2 frozen bananas, cut into small chunks (it’s easier to do the chunks before they are frozen)
*1/2 cup frozen blueberries (açaí berries taste great too)
*1/2 cup canned coconut milk (Do NOT skip this! It makes your bowl so creamy and smooth!)
Toppings:
*mini marshmallows
*Airheads rainbow candy
*rainbow sprinkles
Optional Toppings:
*mini chocolate chips
*Trader Joe’s Organic Unsweetened Coconut Chips
*Sliced almonds
*fresh fruits and berries
*granola
*and of course, sprinkles!
Blend all ingredients in a blender until smooth and creamy. Scoop into bowls, top with desired toppings and serve. Enjoy! For a non- St. Patrick’s Day version, we like to top with optional toppings from above.
